My friend Pat and I returned home last May from a wonderful week, feeling relaxed, refreshed and also inspired by the excellent food we were served, at every single sitting. Once back at home, I decided to buy 'The Vegetarrean' cookbook and I have since recreated some of the fabulous dishes we had whilst on our holiday. I have found using the cookbook easy, as it is very well explained and the recipes work well with the ingredients listed. This has given me immense pleasure as it allows me to recreate the feelings and mood we experienced during our holiday, as well as tasting high quality food created in an inspriational way. I relise that it has now been some time since we were at Alberto and Malu's idyllic setting, but, I find myself thinking about it more than any other holiday I have had. So I want to say a big big thank-you to Malu, Alberto and all the staff for giving me one of the best experiences in my life.

I am going to purchase a copy, after finding it in our local library at the Gold Coast in Australia. Perhaps one day I may be able to come and join you and sample your food and do a cooking course. What a lovely idyll to relax and regenerate. Brilliant hosts, exquisite cuisine (you don't need to be vegetarian to enjoy this experience)efficient service wrapped in restful surroundings, beautiful countryside, with good weather - just perfect!
